Join professional Chef Fred Csibi-Levin in this Intro to Tarts class! He will teach you all there is to know including classic doughs and their differences such as Pate sucrée, Pate brisée, and Pate a foncer. This class is ideal for ages 12+ You will be introduced to modern piping techniques worthy of Parisian bakeries as well as flour types, and their uses. Similarly, you will learn the role and mechanism of butter in determining texture and flakiness in addition to the roles and types of sugar used in pastries. The desserts to be prepared are small and large blueberry lemon tarts. Chef Fred is a scientist-turned-pastry chef. Since honing his craft he has worked as an executive pastry chef at an upscale bakery, consulted for large restaurant groups, and bakeries, and started his business!
