Brazilian cuisine is a celebration of contrast and balance—smoky vs. fresh, rich vs. bright, rustic vs. refined. Just like French cuisine has its “mother sauces,” Brazilian cooking relies on foundational elements:


  • Tempero base (garlic, onion, salt)

  • Textural contrast (crispy farofa vs. juicy meats)

  • Acidity for balance/roundness (vinagrete, lime)

  • Slow vs. fire cooking (braising vs. grilling)

In this masterclass, we’ll explore three iconic preparations that reflect those principles.
